Grilled Sweet Italian Chicken Sausage, Pepper, and Onion Sandwiches

Grilled al fresco Sweet Italian Fully Cooked Chicken Sausage, Pepper, and Onion Sandwiches recipe for foodservice application.

Ingredients

4 al fresco Sweet Italian Fully Cooked Chicken Sausage
canola oil cooking spray
4 cups chopped vidalia onion
3 tablespoons balsamic vinegar
7 ounces roasted bell pepper
1/4 teaspoon ground black pepper
8 ounces french bread baguette, halved lengthwise

Instructions

Heat a large skillet over medium high heat. Coat pan with cooking spray, add onion and al fresco sausage. Cook for one minute. Sprinkle with vinegar, cook for 14 minutes for until sausage is done, turning occasionally.
Drain the red peppers, slice and add bell peppers, cook 1 minute. Sprinkle with black pepper. Arrange sausage mixture evenly over bottom half of bread. Cut into five sandwiches
