Sweet Italian Chicken Sausage Hoagies

Hoagies using al fresco Sweet Italian Fresh Chicken Sausages, with peppers, pepperoncini, recipe, foodservice application.

Ingredients

4 al fresco Sweet Italian Fresh Chicken Sausage
4 tablespoons olive oil
3 garlic cloves, minced
1 onion, sliced
1 yellow bell pepper, sliced
1 red bell pepper, sliced
3 ounces peperoncini
1 teaspoon black pepper, ground
6 small hoagie rolls
3 tablespoons unsalted butter
1 1/2 teaspoon italian herb blend

Instructions

Add 2 tablespoons of olive oil to a large non-stick skillet over medium high heat. Add garlic, onion, and peppers. Season with pepper.
In second skillet, over medium-high heat, add remaining tablespoon of oil and cook the chicken sausage until the internal temperature reaches 165 F and the outside has browned. Remove from pan and slice the chicken sausage in 1/2" pieces and add to the first skillet with the peppers and onions.
In a small pan, melt olive oil and butter together with the garlic, lightly brown.
Pre-heat the broiler to high. Prepare bread, split the bread and brush with garlic butter and sprinkle with a little Italian Seasoning. Lightly toast each side under the broiler.
Add 3 tablespoons of the juice from the pepperoncini jar to the skillet with the chicken sausage and peppers, and mix well. Pile the mixture into the garlic rolls and serve.
