Country Style Sausage Breakfast Frittata

Ingredients

1 1/4 pounds al fresco Country Style Fully Cooked Breakfast Chicken Sausage, approx 6 links, sliced 1/4" coin cut pieces
12 eggs, large
1/3 cup parsley, chopped
4 ounces water
1/3 teaspoon salt
1/2 teaspoon black pepper
cooking spray
2 1/2 tablespoons extra virgin olive oil
2 1/2 onions, diced 1/4"
2 1/2 large yellow bell peppers, diced 1/4"
2 1/2 cups cherry tomatoes, quartered
2 1/2 pounds asparagus, cut into 1" pieces, blanched 1 minute
1 3/4 cup cheddar cheese, shredded, low sodium 1/2 cup asiago, shredded

Instructions

Use 2 12" ovenproof nonstick skillets and divide all the ingredients in half accordingly.
Whisk the eggs with the parsley, water, salt and pepper in a large bowl. Set aside. Pre-heat oven to 350 degrees.
Place the skillets over medium-high heat, coat each with the cooking spray and olive oil. Saute the onions and peppers for 2 minutes, shaking vigorously. Add the sausage pieces, asparagus and saute an additional 3 minutes. Toss in the tomato pieces for an additional minute.
Pour the egg mixture over and cook for 3 - 4 minutes until the eggs begin to set, adjust heat as necessary. Top with the cheeses and place in the oven for an additional 3 - 4 minutes to melt the cheeses and brown the top. Cut into wedges and serve immediately.
