Asian Pulled Pork Sliders with Slaw

Kayem Smoked Pork Asian Sliders, in Asian dressing with Asian slaw, in steam bun, recipe, foodservice application.

Serves: 10

Ingredients

1 pound Kayem Artisan Smoked Pork
1/2 cup teriyaki sauce glaze (plus extra for plate)
1/2 cup sriracha sauce glaze (plus extra for plate)
20 butterfly steamed buns
1 tablespoon black and white sesame seeds for garnish
5 tablespoon sliced scallions for garnish
Asian Slaw: Dressing Ingredients
1 tablespoon fresh garlic, minced
1 tablespoon ginger, minced
1/2 cup rice wine vinegar
2 tablespoon lemon juice
2 tablespoon soy sauce
1 teaspoon sriracha sauce
1 tablespoon white sesame seeds, toasted
1 tablespoon black sesame seeds, toasted
2 tablespoon brown sugar
2 tablespoon honey
1 tablespoon peanut butter
2 tablespoon sesame oil
1/4 olive oil
Slaw Ingredients
1/2 head nappa cabbage, julienne
1 bunch cilantro, rough chopped
1 red bell pepper, julienne
1 bunch scallions, sliced
8 ounces mung bean sprouts

Instructions

Steamed Buns: Steam butterfly buns for 5 minutes.
Combine pork with both sauces and fill buns equally. Garnish with sesame seeds, scallions and serve with Asian Slaw, teriyaki and sriracha sauces
Asian Slaw: Combine all the ingredients for the dressing except the oil in a bowl and whisk until well incorporated. Slowly add the oils while whisking until well blended. Combine all the ingredients for the slaw and set aside.
Just prior to the service, combine, the dressing the slaw.
