Spicy Jalapeno Street Tacos

al fresco Jalapeno Chicken Sausage in a tortilla with red onions, cheddar, cilantro, scallions, salsa, avocado and lime wedge. Recipe for foodservice application.

Spicy Jalapeno Street Tacos

Ingredients

  • 4 al
  • fresco Jalapeno Chicken Sausage
  • extra virgin olive oil spray
  • 1/2 medium red onion 2 1/2", sliced
  • 8 corn tortillas
  • 4 radishes 1" to 1 1/4", thinly sliced
  • 1/2 cup shredded sharp cheddar
  • 1/3 cup scallions, chopped
  • 1/3 cup cilantro, chopped
  • 1 avocado, cubed
  • 1/2 cup pico de gallo salsa
  • 1 ounce pepperoncini
  • 1 lime, sliced into 8 wedges

Instructions

  1. Pre-heat oven to 350. Brown tortillas in oven until lightly toasted.
  2. Spray medium sauté pan with cooking spray and brown sausages over medium heat
  3. Remove from heat and add sliced red onions, sautéed until soft.
  4. Slice sausages to 1/4 inch slices. Top tortilla with sausages and remaining ingredients, saving the cheese for last.
  5. Continue until all 8 tacos are prepared.
  6. Served garnished with whole Pepperoncini peppers and lime slices.
