Grilled Italian Sausage Chicken Sausage with Tomato Cream Sauce over Linguine

Grilled Italian Sausage Chicken Sausage with Tomato Cream Sauce over Linguine

Ingredients

  • 4 al fresco Sweet Italian Fully Cooked Chicken Sausage
  • 2 teaspoons extra virgin olive oil
  • 1 cup white onion, chopped
  • 1 teaspoon garlic, minced
  • 3/4 cup red wine
  • 14 and a half ounces canned diced Italian herb tomatoes
  • 1 teaspoon oregano
  • 1/4 teaspoon black ground pepper
  • 1/2 cup light cream
  • 1/2 pound linguini pasta
  • 2 tablespoon parmesan cheese, grated
  • 1 tablespoon oregano, leaves

Instructions

  1. Prepare grill for direct cooking, preheat to medium temperature range. Grill sausage links over direct heat, turning every minute. Remove from grill. Cool slightly. Cut sausage into 1/4 inch circles.
  2. Meanwhile, using medium-high heat, heat oil in a large, heavy skillet. Add onions and saute for about 2 minutes, stirring occasionally. Add garlic and cook, just until fragrant, about 30 seconds. Reduce heat to low and add wine, tomatoes, sausage, oregano, and black pepper. Add cream and cook for 1 minute.
  3. Cook linquine in boiling salted water, according to package directions. Cook until al dente. Drain. **Portion cooked linquine onto warm plates or pasta bowls. Spoon sausage/sauce over pasta. Sprinkle each with Parmesan and garnish with fresh oregano.
