Grilled Corn Salad with Artisan Sausage and Shrimp Skewers

Grilled Corn Salad with Artisan Sausage and Shrimp Skewers

Ingredients

  • 12 ounces Kayem Artisan Four Pepper Hot Pepper Hot Fully Cooked Sausage
  • 1 corn cob
  • 1/2 pound shrimp
  • extra virgin olive oil cooking spray
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon chili pepper
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped jalapeno peppers
  • 1 tablespoon water
  • 1 cup canned black eyed peas, rinsed and drained
  • 3/4 cup sliced red onion
  • 1 cup frozen lima beans, heat in microwave for 1 minute
  • 6 ounces cherry yellow tomatoes, halved
  • 1/3 cup cilantro
  • 1/2 cup cubed avocado
  • 3 cups baby spinach

Instructions

  1. Pre-heat grill on medium-high
  2. Shuck ear of corn, coat with cooking spray and lightly dust with ½ tsp of chili powder. Grill corn for 12 minutes turning half way. Corn should be evenly charred; remove from grill cool 5 minutes then cut kernels off for salad.
  3. To make the marinade, mix the olive oil, lime juice, 1/2 tsp chili powder, salt, pepper, chopped jalapeno and water in a small bowl. Reserve 2 tbsp.
  4. In a medium bowl, mix the corn, black eye peas, red onion, lima beans, cilantro, avocado and toss with the marinade.*
  5. Grill the sausage links 5 - 6 minutes per side, slice on the diagonal ½" thick.
  6. Skewer 6 kabobs of shrimp, 3 ea., lightly coat with cooking spray. Grill 2 - 3 minutes per side. Remove from the grill and brush with the reserved marinade.
  7. To assemble: divide the spinach salad mix amongst 6 plates and top with the salad. Evenly portion the sausage slices around the salad and give each a shrimp kabob. Serve immediately.
