Escarole Soup with Sweet Italian Chicken Sausage

Ingredients

4 al fresco Sweet Italian Fresh Sausage
3 quarts chicken broth
2 tablespoons olive oil
2 garlic cloves
1 cup celery, diced
1 cup carrots, chopped
3/4 cup scallions
3 cups escarole, chopped
1 cup soybeans

Instructions

In a large sauce pan, saute garlic, celery, carrots and scallions in oil over medium heat. Add chicken broth and washed escarole and bring to a boil. Reduce heat and simmer for 45 minutes.
Pan fry chicken sausage until the have browned on the outside, about 10-15 minutes.
Slice sausage and add with soybeans and simmer for another 15 minutes.
